Chef Josiah and the talented crew at Gravity Haus Breckenridge have crafted an impressive Cabin Juice summer menu, showcasing ingredients from small sustainable Front Range and Western Slope farms. Here’s what to order while you kick back and take in downtown Breckenridge’s summertime action.
Order This: The Colorado Caprese. A summertime classic, this shareable starter is built around haus-made ricotta cheese, poached beets and heirloom tomatoes. Big flavor comes from fresh garden basil and a red wine reduction, while the quinoa crumble adds texture. Add a side of grilled sourdough with whipped butter and Maldon sea salt for a real treat.
Pair it With: The Summer Sour cocktail. The fresh, light citrusy sipper is made with bourbon, amaretto, lemon, peche, simple syrup.
Order This: Gambas al Ajillo. Seafood lovers, dive into this appetizer of shell-on shrimp in cured lemon and white wine butter sauce served with an Italian parsley grilled baguette.
Pair it With: The Jalisco Rose. Conjure festive vibes with spicy tequila, aperol, lemon, agave, rosé sour.
