Order This: The Colorado Caprese. A summertime classic, this shareable starter is built around haus-made ricotta cheese, poached beets and heirloom tomatoes. Big flavor comes from fresh garden basil and a red wine reduction, while the quinoa crumble adds texture. Add a side of grilled sourdough with whipped butter and Maldon sea salt for a real treat.
