On this special land they are growing nutritious food for their neighbors while they nurture a close community. Side by side, Elkstone is working with the soil, tasting its fresh produce, and learning to be better stewards of the Earth. What’s on the Menu? Gravity Haus members are their guests will take part in a 7-course meal tasting experience. All of the food that you will be tasting will be locally sourced, with everything made from scratch and utilizing ingredients from the farm, valley and region.

• Grilled sourdough with preserved grilled eggplant and preserved tomato in oil with local cheese and herbs
• Elkstone salad with farm vegetables, nasturtium and gooseberry vinaigrette
• Roasted winter squash soup with fresh herbs
• Farm-grown mushroom tortelloni with braised pastured beef, beurre monte
• Bison tenderloin with rice, herbs, and farm herb ‘bearnaise’
• Strawberry soufflé
• Mignardises
