About the Experience: Celebrating the end of summer and our farm partner, R Farms, this dinner features a whole hog hailing from R Farms in Eagle, Colorado and beverages from New Belgium Brewery. Our new Director of Culinary, Jason Brumm, will be elevating the traditional grill out by serving the following menu:
Reception & Welcome
- Carnitas Tostadas and Grilled Pineapple
- Pork Belly Summer Rolls and Nuoc Cham
- Pimento, Smoked Almonds and Bacon Jam
Family Style Dinner
- R Farms Smoked Pork Loin and Glazed Rib
- Heirloom Cornbread and Sorghum Butter
- Grilled Peach and Fermented Chile with Peanuts
- Squash Gratin and Sweet Onion Cream
Dessert
- Palisade Peach Salted Honey Pie

Important Notes
- Responsible drinking: Please consider booking a room at Gravity Haus with your member discount if you don’t have a designated driver.
- Timing: The welcome reception is casual, but we will begin dinner and the pairings promptly at 5:30 p.m. If you will be late, kindly let us know.
- Parking: Available across the street in the public garage.
- What’s included? A three course meal and pairings. Additional drinks will be available for purchase.
