Here, Chef Lupe shares some of his favorite Stella summer menu dishes:
Stella’s Chef Lupe Solis has built a summer menu around his unorthodox culinary style of intermingling his Latin heritage with Mediterranean and Middle Eastern influences.
Guests and visitors to Cedar House Sport Hotel, re-launching as Gravity Haus Truckee-Tahoe, are treated to light healthy breakfasts and farm-to-fork dinners.
Soulful and locally sourced, Chef Lupe’s vibrant dishes are based around a chosen fresh vegetable. From there, he reimagines classics by layering Latin and Middle Eastern flavors, partnering with local farmers to build three to four seasonal menus each year.
“What better way to share my passion for cooking than to bring together my two favorite flavors to cook,” he says.
The Seared Steak: Chef’s favorite dish to savor, he loves the fresh summer asparagus and morel mushrooms next to the tender sous-vide filet mignon. A real treat, the crisped fingerling potatoes sing with spring onions from Shared Abundance Farm cooked down with vinegar, fresh aromatics and a mole negro that chef puts hours of love into — we’re talking a slow cook of braised Mexican chiles, plantains, spices, pepitas, sesame and chocolate.
The Turmeric Chicken: Chef Lupe’s cherished ode to Lebanese cuisine, he pan roasts airline chicken breast from nearby Mary’s Farm and pairs it with lentils, lemon labneh and smashed Persian cucumber salad from Natural Trading Company with a tahini tamari dressing.
The Local Farm Feature: Always a treat, this herby summer offering sings with a local seedless mini watermelon salad, cubed and marinated in chimmichurri and served with peppery arugula, harissa, feta, chives and fresh mint from the restaurant’s garden.
Other must-tries include a raw shrimp ceviche served with house made tostaditas, the wild mushroom tinga tacos and a wood-fired cauliflower steak in garlic cashew sauce paired with Egyptian rose, harissa carrots and lemon herb couscous.
Chef Lupe’s favorite way to break bread at Stella? Begin with the For the Table menu for a communal dining moment (try the herb falafel with lemon garlic tahini and Little Roots Farm micro herbs) and then move on to traditional dining with a salad and entrée that call to you. Cap the meal with a collective dessert — you can’t go wrong sharing the flourless chocolate cake with honeycomb candy.

Gravity Haus celebrated its fourth location with the purchase of the award-winning Cedar House Sport Hotel in Truckee.
